This is one of the favorite recipes in our house and great for afternoon snack for the kids (or a late night snack for me!). All you need is some frozen fruit (I find this is the best with frozen bananas or frozen strawberries) and a food processor (or a super high powered blender)!
Healthy Banana (or Strawberry) Ice Cream
Things you need:
- Frozen fruit. If using bananas, I typically use about 4 at a time. It using other frozen fruit, I usually just eyeball it, but it probably comes out to about 2-3 cups.
- Food Processor
Note: If using bananas make sure they're ripe, then peel them, cut them into small pieces and freeze in a zip lock bag or air tight container for at least 2 hours. If using other fruit, I just use prepackaged frozen strawberries or blackberries.
- Put frozen fruit into the food processor and blend. It might take about 5 minutes for it to get to ice cream consistency. Just keep pulsing/blending until it gets creamy, it will go through a couple of stages before reaching that point. Every so often, you will need to scrape the fruit on the sides of the food processor back into the bowl.
- Once it passes the "chunky banana puree" (or "grainy/crumbly berry") phase, it should start to turn into the "creamy ice cream" phase. Blend for another minute or so and then your done!
- You can eat this right away, but it might be a little soft. I find it's best to put it in an air tight Tupperware and put it in the freezer for an hour or 2 before eating.

-When using berries, specifically ones that are more tart, I will add a teaspoon of agave syrup (honey should work as well) in with the frozen berries. This adds some sweetness, while still being healthy. Sometimes I add a teaspoon or 2 of vanilla almond milk as well to give some added creaminess. You can also add peanut butter or chocolate chips if using bananas! The possibilities are endless!
-With berries, the consistency will be more like sorbet and less like soft serve. Still extra delicious, just a different look/consistency!
